Default salmon ideas

Just looking for some new ideas for cooking salmon. it's pretty popular in our home, but I'm getting a little tired of my go-to's: lemon & dill and ginger glaze. Anyone have any good recipes they want to share?

This sounds weird but.. bbq sauce and jam. Smother salmon. Wrap in foil. Bake. Surprisingly delicious.

Salmon takes really well to asian flavours, like teriyaki.

Or just olive oil, salt and pepper. Go to a gourmet food store and get a high-end salt, like a coarse sea salt, you only need a little and it's very yummy.

You can also make a nice reduction sauce with balsemic vingar that would go really nicely over salmon... just balsemic in a pan (or toss in some berries for a nice sweetness) and boil until it thickens a little and pour over the salmon.

Maple also tastes really good with salmon.

What I like to do if I have a bit more time and want to make something fancier is salmon (or halibut) wrapped in phyllo pastry. The pastry can be a bit finicky but is relatively straightforward. Put whatever flavouring you want in with the salmon (I've used standard ones like lemon and dill etc) and wrap it in 2 or 3 layers of phyllo, brushing a thin coat of melted butter in between each layer. You can make all sorts of fancy shapes but I just roll it and tuck the ends in. Then brush the outside with melted butter and bake. It's also nice with a light cream sauce (white wine, lemon etc) drizzled over top, but tastes great on its own too.

This one is from a Green light Cookbook and it is so juicey and tasty and taked no time at all to make.
